My family LOVES popcorn and because of that we go through a lot of popcorn kernels. My girls and husband like their popcorn with salt and butter and while I do like popcorn like that, I also like to experiment with sweet types of popcorn like the following:
This popcorn combines several of my favorite things, coffee, white chocolate and toffee. I had a very hard time restraining myself from eating way to much of this delicious and addicting popcorn.
Coffee Toffee Popcorn
Ingredients:
- 8 cups popped popcorn
- 2 cups miniature marshmallows
- 1 1/2 cups white chocolate melts
- 1 tablespoon espresso powder
- 1/2 cup toffee bits
Directions:
- Cover a large baking sheet with wax paper or a silpat.
- In a large bowl, combine the popcorn and marshmallows.
- Place the white chocolate melts into a microwave safe bowl. Heat for 30 seconds, stir, heat again for 15 seconds and stir until creamy and completely melted. Stir in the espresso powder.
- Pour the melted chocolate over the popcorn and marshmallows and stir until well coated.
- Spread the mixture out onto the prepared baking sheet. Immediately sprinkle with toffee bits and lightly toss.
- Place in the refrigerator for 5 minutes to allow the chocolate to set up.
- Remove from the refrigerator and break into chunks. Store in an airtight container.
