Coffee Toffee Popcorn

My family LOVES popcorn and because of that we go through a lot of popcorn kernels. My girls and husband like their popcorn with salt and butter and while I do like popcorn like that, I also like to experiment with sweet types of popcorn like the following:



This popcorn combines several of my favorite things, coffee, white chocolate and toffee. I had a very hard time restraining myself from eating way to much of this delicious and addicting popcorn.

Coffee Toffee Popcorn

Ingredients:

  • 8 cups popped popcorn
  • 2 cups miniature marshmallows
  • 1 1/2 cups white chocolate melts
  • 1 tablespoon espresso powder
  • 1/2 cup toffee bits

Directions:

  1. Cover a large baking sheet with wax paper or a silpat.
  2. In a large bowl, combine the popcorn and marshmallows.
  3. Place the white chocolate melts into a microwave safe bowl. Heat for 30 seconds, stir, heat again for 15 seconds and stir until creamy and completely melted. Stir in the espresso powder.
  4. Pour the melted chocolate over the popcorn and marshmallows and stir until well coated.
  5. Spread the mixture out onto the prepared baking sheet. Immediately sprinkle with toffee bits and lightly toss.
  6. Place in the refrigerator for 5 minutes to allow the chocolate to set up.
  7. Remove from the refrigerator and break into chunks. Store in an airtight container.
