When it comes to exercise, I have always been good about getting cardio done. Strength training, has been something that I have struggled to do consistently. However, just over 5 years ago, I found this amazing app and I have been consistently strength training 5 days a week since then. With all the working out I do, I would love to have a six pack, but I love food too much and indulge in meals like this.
This pasta is truly indulgent. It is creamy, cheese and incredible delicious. To make it even better, it is made completely in the crock pot. It takes a couple of different steps in the crock pot, but a crock pot is all you need.
Crock Pot Cheesy Buffalo Chicken Pasta
Ingredients:
- 1 1/2 pounds boneless skinless chicken breasts
- 3 cups low sodium chicken broth
- 1/2 cup buffalo sauce, divided
- 1 tablespoon ranch seasoning mix
- 1/2 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 8 ounces cream cheese
- 4 ounces sharp cheddar cheese, shredded
- 1 tablespoon cornstarch
- 1 tablespoon water
- 16 ounces linguine noodles
Directions:
- In a crock pot, add in the chicken. Pour the chicken broth and 1/4 cup buffalo sauce over top of the chicken and sprinkle with the seasoning. Place the cream cheese on top and sprinkle with the shredded cheddar cheese.
- Cover the crock pot and cook on high for 4 hours or low for 8 hours or until the chicken is completely cooked. Transfer the chicken to a bowl and stir in 1/4 cup buffalo sauce. Set aside.
- Once the chicken is completely cooked, remove it from the crock pot and shred it with two forks.
- In a small bowl, whisk together the cornstarch and water. Add this mixture to the crock pot.
- Whisk all of the ingredients in the crock pot until well combined and smooth with no lumps.
- Break the linguine noodle in half, if needed to fit in the crock pot. Top the noodles with the shredded chicken.
- Cover the crock pot and cook on high for additional 30-60 minutes, until the noodles are completely cooked. Stir the noodles 3-4 times during the cooking time. If the noodles are not done after an hour, add an extra 1/4 cup of broth at a time, as needed, until the noodles are completely cooked.

Notes:
When reheating the pasta, add a splash of broth to help keep the sauce smooth.
