A twice baked potato is one of my favorite ways to enjoy a potato. They do require a bit of time to prepare. First you have to bake the potatoes, let them cool. Take out the potato flesh, mix it with other ingredients, bake the potato skins. Then finally put it all together and bake one last time.
This casserole takes away some of that work, but still leaves with a similar taste of a twice baked potato.
