I love twice baked potatoes, the filling is so creamy and delicious. This casserole has all the goodness of a twice baked potato, plus bacon.
Tender potatoes, creamy filling mixture and lots of cheesy goodness.
Twice Baked Potato Casserole
Ingredients:
- 3 pounds red potatoes, baked
- 1/4 teaspoon black pepper
- 1- 12 ounce package turkey bacon, cooked and crumbled
- 24 ounces light sour cream
- 2 cups shredded mozzarella cheese
- 2 cups shredded cheddar cheese
- 2 green onions, sliced
- Preheat oven to 350º F. Spray a baking dish with cooking spray.
- Cut potatoes into bite sized pieces and place in prepared baking dish.
- Sprinkle with half of the pepper and bacon.
- Top with half of the sour cream, mozzarella and cheddar cheese. Repeat the layers.
- Bake uncovered for 20-25 minutes or until cheese is melted.
- Sprinkle with green onions.
