This is a recipe for a basic chicken noodle soup. Perfect for those days when you are not feeling well and want the comfort of chicken noodle soup. Plus it is much better than the canned variety.
Homestyle Chicken Noodle Soup
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, peeled and cut diagonally into 1/2 inch thick slices
- 2 celery ribs, halved lengthwise and cut into 1/2 inch thick slices
- 2 teaspoons dried thyme
- 1 bay leaf
- 8 cups low sodium chicken stock
- 8 ounces wide egg noodles, uncooked
- 1 1/2 cups shredded cooked chicken
- black pepper to taste
- 1/2 lemon, juiced
Directions:
- In a large pot, heat olive oil over medium heat. Add in the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened, but not browned.
- Pour in the chicken stock and bring to a boil.
- Add in the noodles and simmer for 5 minutes or until the noodles are staring to get tender.
- Add in the chicken and continue to simmer until chicken is heated through and noodles are cooked.
- Stir in black pepper to taste and lemon juice.
- Remove bay leaf before serving.
