I can't believe I lived so long without pimento cheese. It wasn’t until a few years ago when I discovered pimento cheese at Costco and realized what I had been missing my whole life. Like I always do, I decided to make my own homemade version and like always, it led me to make different varieties.
I already have a spicy pimento cheese, it is made with jalapeños. This spicy version is not as spicy since it uses pepper jack cheese instead of freshly diced jalapeños. Both are delicious versions of pimento cheese, they just have different levels of spiciness.
Pepper Jack Pimento Cheese
Ingredients:
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded pepper jack cheese
- 4 ounces cream cheese, softened
- 1/4 cup mayonnaise
- 2 1/2 tablespoons pimentos
- 1/8 teaspoon black pepper
- 2-3 dashes Worcestershire sauce
Directions:
- Using an electric mixer, beat together the cream cheese, mayonnaise, black pepper and Worcestershire sauce.
- On low speed, mix in both shredded cheeses and pimentos.
- Cover the bowl and refrigerate for at least a few hours. Refrigerate overnight for best flavor.
