This may be the unpopular opinion, but when it comes to pudding, I much prefer vanilla to chocolate. I had great success with my Chocolate Pudding and Dark Chocolate Pudding. However, I did not have good success with a homemade vanilla pudding. After several attempts I finally have a winning recipe. It is smooth, creamy and of course delicious.
Vanilla Pudding
Ingredients:
- 1/3 cup granulated sugar
- 2 tablespoons cornstarch
- 2 cups half and half
- 2 egg yolks
- 2 tablespoons unsalted butter, room temperature
- 1 tablespoon vanilla extract
Directions:
- In a medium saucepan, whisk together the sugar and cornstarch.
- Slowly whisk in the half and half.
- Place the saucepan over medium heat and cooking stirring constantly until the mixture begins to boil and thickens. Allow the mixture to boil for 1 minute, while still stirring.
- Remove the saucepan from the heat.
- In a medium bowl add in the egg yolks and beat lightly.
- Briskly whisk the egg yolks while slowly pouring in half of the hot milk mixture.
- Stir the egg yolk mixture back in to the saucepan. Bring the mixture to a boil and boil for 1 minutes, while stirring constantly.
- Remove the saucepan from the heat and stir in the butter and vanilla extract. Stir until completely smooth and mixed.
- Strain the pudding through a fine mesh sieve
- Place a piece of plastic wrap directly on top of the pudding and refrigerate for at least 4 hours or until chilled.
- Whisk again before serving.
