Dark Chocolate Pudding

Dark Chocolate Pudding: Savory Sweet and Satisfying

After I made this basic chocolate pudding, I got the idea to switch out the regular cocoa powder and semi-sweet chocolate chips for dark in order to create a dark chocolate pudding. The dark chocolate flavor really came through in this thick and creamy pudding.

Dark Chocolate Pudding

Ingredients:

  • 1/3 cup dark chocolate cocoa powder
  • 1/2 cup granulated sugar
  • 2 cups whole milk, divided
  • 4 teaspoons corn starch
  • 3 egg yolks
  • 1/4 cup dark chocolate chips, melted
  • 1 tablespoon unsalted butter, room temperature
  • 2 teaspoons vanilla extract

Directions:

  1. Place a fine mesh sieve over a large bowl and set aside.
  2. Sift the cocoa powder into a medium saucepan and then stir in the sugar.
  3. Slowly whisk in 1 1/2 cups of milk until the mixture is smooth.
  4. Heat over medium-high heat, stirring constantly, until the mixture comes to a simmer. Remove from the heat and set aside.
  5. In a large bowl, whisk together the remaining 1/2 cup milk, corn starch and egg yolks.
  6. Stir this mixture rapidly while very slowly pouring the hot milk mixture into the egg mixture. Pour this mixture back into the saucepan.
  7. Heat over medium-high heat while whisking constantly until the mixture comes to a full boil.
  8. Reduce the heat to a simmer and continue to whisk until the pudding has thickened.
  9. Remove from the heat and stir in the melted chocolate chips, butter and vanilla. Stir until completely smooth and mixed.
  10. Strain the pudding through the fine mesh sieve.
  11. Place plastic wrap directly on top of the pudding and then refrigerate for at least 4 hours or until chilled.
  12. Whisk again before serving.
