Turkey, Rice and Broccoli Casserole: Savory Sweet and Satisfying

The best part of this dish happened because the grocery store was out of one of the ingredients I needed for this dish. When I went to buy fried onions, the store brand was out of stock and the name brand was twice as much for less product.

I happened to see this bag of Crispy Spicy Pickle Seasoned Cucumbers and thought they sounded pretty good. We love pickles at our house and spicy things so I decided why not give it a try.

These crispy cucumbers are amazing and they made the dish unbelievably delicious! I told my husband that the dish originally called for fried onion rings and he said please don't ever make it with those, please.

I found these delicious crispy cucumbers at Meijer. I do not know if any other brand makes something likes these, but if you happen to find another brand please let me know.

Turkey, Rice and Broccoli Casserole

Ingredients:

  • 1 1/2 cups brown rice
  • 2 cups frozen broccoli florets, thawed
  • 2 cups cooked cubed turkey
  • 2 cans condensed low sodium cream of mushroom soup
  • black pepper, to taste
  • 2 cups shredded sharp cheddar cheese
  • 6 ounces crispy spicy pickle seasoned cucumbers

Directions:

  1. Cook the rice according to the package directions.
  2. Preheat the oven to 350º F. Lightly spray a 9x13 inch baking dish with cooking spray.
  3. In a large bowl combine the cooked rice, thawed broccoli, turkey and soup. Season with black pepper.
  4. Transfer the mixture to the prepared baking dish and sprinkle the cheese and crispy cucumbers on top.
  5. Bake for 20 minutes or until the cheese is melted and casserole is warmed throughout.
Enjoy!!!

Notes:
You can substitute fried onions for the crispy cucumbers.
