The best part of this dish happened because the grocery store was out of one of the ingredients I needed for this dish. When I went to buy fried onions, the store brand was out of stock and the name brand was twice as much for less product.
I happened to see this bag of Crispy Spicy Pickle Seasoned Cucumbers and thought they sounded pretty good. We love pickles at our house and spicy things so I decided why not give it a try.
These crispy cucumbers are amazing and they made the dish unbelievably delicious! I told my husband that the dish originally called for fried onion rings and he said please don't ever make it with those, please.
I found these delicious crispy cucumbers at Meijer. I do not know if any other brand makes something likes these, but if you happen to find another brand please let me know.
Turkey, Rice and Broccoli Casserole
Ingredients:
- 1 1/2 cups brown rice
- 2 cups frozen broccoli florets, thawed
- 2 cups cooked cubed turkey
- 2 cans condensed low sodium cream of mushroom soup
- black pepper, to taste
- 2 cups shredded sharp cheddar cheese
- 6 ounces crispy spicy pickle seasoned cucumbers
Directions:
- Cook the rice according to the package directions.
- Preheat the oven to 350º F. Lightly spray a 9x13 inch baking dish with cooking spray.
- In a large bowl combine the cooked rice, thawed broccoli, turkey and soup. Season with black pepper.
- Transfer the mixture to the prepared baking dish and sprinkle the cheese and crispy cucumbers on top.
- Bake for 20 minutes or until the cheese is melted and casserole is warmed throughout.
Notes:
You can substitute fried onions for the crispy cucumbers.
