I love that my girl are taking an interest in making things in the kitchen, but why is it the baking they want to do, I love to bake. Cooking is something that I do not mind doing, but sometimes I just get tired of cooking and would love for someone else to do it.
Anyway onto these doughnuts. Peanut butter, chocolate and banana are just a combination that goes so well together, so why not use it in a doughnut, plus it helps to get rid of my endless supply of frozen overripe bananas. The doughnut itself reminds me of banana bread with peanut butter. For the chocolate on top, you can use semi-sweet, milk chocolate or dark chocolate chips. I used dark chocolate, because that is what I prefer and loved how it tasted with the peanut butter and banana doughnut.
Baked Peanut Butter Banana Doughnuts
Ingredients:
- 1/2 cup peanut butter
- 1/3 cup nonfat Greek yogurt
- 1/2 cup canola oil
- 2 medium overripe bananas, mashed
- 1 teaspoon vanilla extract
- 1 egg, lightly beaten
- 1/2 cup brown sugar
- 1 1/2 cups whole wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups dark chocolate chips
Directions:
- Preheat the oven to 350º F. Spray 8 cavities between two doughnut pans with cooking spray.
- In a large bowl, add in the peanut butter, yogurt, oil, mashed bananas, vanilla, egg and brown sugar. Mix until just combined.
- In a medium bowl, whisk together the flour, baking soda, baking powder and cinnamon.
- Add the dry ingredients to the wet ingredients and mix just until combined, do not over mix.
- Spoon the batter into the prepared cavities of the doughnut pans, filling the about 3/4 full and spread into an even layer.
- Bake for 10-15 minutes or until an inserted toothpick comes out clean.
- Let the doughnuts cool in the pan for a few minutes and then remove to a cooling rack and allow to cool completely.
- Add the chocolate chip to a medium bowl. Microwave in 30 seconds intervals, stirring well in between each interval, until completely melted and smooth.
- Take the doughnuts and dip the tops into the melted chocolate. Lift the doughnut up and gently shake the excess chocolate off into the bowl. Place the doughnuts back onto the cooling rack to allow the chocolate to set.
