Lasagna noodles are spread with a delicious mixture of chicken, two types of cheeses, tomatoes and bacon. Then they are rolled up and top with Alfredo sauce and even more cheese and bacon.
This meal is not only easy to prepare, but it tastes delicious. The most difficult part of this meal is the time it takes to spread the filling on the noodles and roll them up. But it is much easier to serve than lasagna made the traditional way.
I really like the idea of the lasagna rolls, I think I need to find or create some other flavors to try.
Chicken Bacon Alfredo Lasagna Rolls
Ingredients:
- 12 lasagna noodles
- 15 ounces Alfredo sauce
- 1/2 cup milk
- 1 1/2 cups ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 2 cups cooked shredded chicken
- 14 ounces diced tomatoes, well drained
- 10 slices turkey bacon
- 1/2 cup shredded cheddar cheese
- chopped green onions, optional garnish
Directions:
- Cook the lasagna noodles according to package directions.
- Cook the bacon until crisp. Let cool and then crumble.
- Preheat oven to 375º F.
- In a large bowl whisk together the Alfredo sauce and the milk. Spread 1 cup of the mixture into the bottom of a 9x13 baking dish.
- In another large bowl combine the ricotta cheese, 1 cup mozzarella cheese, chicken, drained tomatoes and 1/2 cup bacon.
- Lay the cooked noodles out on a lightly spray baking sheet.
- Divided the cheese and chicken mixture between the noodles. Spread the mixture over the entire noodle.
- Roll up each noodle and place in the baking dish.
- Pour the remaining Alfredo sauce over top of the noodles. Top with the remaining mozzarella cheese and the cheddar cheese.
- Bake for 15-20 minutes.
- Top with remaining bacon and green onions, if desired.
Notes:
This dish can prepared, covered and refrigerated before baking and then baked later in the day or the next day. It will take a little bit longer to bake since the dish will be cold.
I used my Basic Alfredo Sauce.
