Steamed cauliflower loaded with chicken, cheese and bacon creates a delicious casserole. One that I will be making again and again.
Ingredients:
- 2 boneless skinless chicken breasts, cooked and cubed
- 1 head cauliflower
- 8 ounces sharp cheddar cheese, shredded
- 8 ounces Monterey Jack cheese, shredded
- 1 bundle green onions, sliced
- 4 slices turkey bacon
- 1/8 teaspoon garlic powder
- black pepper, to taste
Directions:
- Preheat oven to 350º F. Lightly grease a 9x13 baking dish.
- Steam the cauliflower until tender.
- In a large bowl combine both cheeses. Remove 1/4 cup of cheese and set aside.
- To the cheese add the cooked cubed chicken, green onions, bacon and garlic powder. Stir to combine.
- Add the cauliflower to the bowl and stir to combine. Season with black pepper.
- Transfer the mixture to the prepared baking dish and top with the reserved cheese.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for 5 more minutes.
