This soup is an unique but delicious soup. The base is a creamy potato soup, but then it is loaded with asiago cheese and some bacon. The asiago cheese flavor really comes through giving this soup a nice cheese flavor.
Asiago Potato Soup
Ingredients:
- 3 cups chopped yellow onion
- 1 cup chopped celery
- 3 cups chopped carrots
- 6 tablespoon unsalted butter
- 4 cups chopped and peeled russet potatoes, bite sized pieces
- 1 cup white wine
- 2 cups low sodium chicken stock
- 2 cups half and half
- 2 cups shredded asiago cheese
- 6 slices turkey bacon, cooked and crumbled
Directions:
- In a large pot melt the butter, over medium-high heat.
- Add in the onions, celery and carrots, cook, stirring occasionally until tender.
- Add in the potatoes, wine and chicken stock.
- Cover the pot and cook for 20 minutes or until the potatoes are tender.
- Use an immersion blender or transfer to a blender and puree until mixture is smooth.
- To the soup in the pot add in the half and half and cook for 5 minutes.
- Remove from the heat and add in the cheese, stirring until melted.
- Top each serving with bacon.
