Chicken salad has never been a dish that I have ever felt the need to make. It has always been one of those I can take it or leave it type of dishes. That was until I came across this recipe for it. This recipe looked so delicious with the cranberries and sliced almonds, that I decided to try it for lunch one day. I am so glad I did because it was delicious. I served this as a sandwich, but you could also serve it with some crackers.
Cranberry Chicken Almond Salad
Ingredients:
- 3/4 cup plain Greek yogurt
- 1/2 cup miracle whip
- 2 teaspoons honey
- 1/4 teaspoon black pepper
- 5 cups shredded cooked chicken
- 1/3 cup dried cranberries
- 3 green onions sliced
- 1/2 cup sliced almonds, toasted
Directions:
- In a small bowl combine the yogurt, miracle whip, honey and black pepper.
- In a large bowl combine the chicken, cranberries, green onions and almonds.
- Pour the dressing over top and mix to combine.
- Refrigerate until ready to eat.
