A muffins recipe that combines my love of coffee and my love of caramel, plus helps to use up the bananas in my freezer. Well, that makes it a winner in my book. I was already in love with the muffin before I even tried it and of course once I tired it I knew this recipe was a keeper.
Caramel Mocha Banana Chocolate Chip Muffins
Ingredients:
- 1 cup unsalted butter, room temperature
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 3 ripened bananas, smashed
- 1 tablespoon espresso powder
- 1 tablespoon warm water
- 1 teaspoon vanilla extract
- 2 1/4 cup all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 cup mini chocolate chips, divided
- 3/4 cup caramel baking bits
- Preheat the oven to 350º F. Line 2 muffins tins with 20 muffins liners or spray 20 spots well with cooking spray.
- In a small bowl combine the warm water and espresso bowl, stirring until the well mix. If using instant coffee stir until dissolved.
- In a large bowl or the bowl of a stand mixer, cream together the butter and both sugars.
- Add in the egg, mashed bananas, coffee water and vanilla, mix well.
- In a medium bowl combine the flour, baking powder and baking soda.
- Slowly add the dry mixture into the wet mixture, mixing just until combined.
- Fold in 1/2 cup of the chocolate chips and caramel bits with a spoon.
- Fill the prepared muffins tins with the batter, filling about 3/4 of the way.
- Sprinkle the top of the muffins with the remaining chocolate chips.
- Bake for 20-22 minutes or until an inserted toothpick comes out clean.
- Remove the muffins from the tins and allow to cool on a cooking rack.
Notes:
2 tablespoons instant coffee may be substituted for the espresso powder.
