I have been enjoying using english muffins in new ways. Although it's not as if this breakfast casserole is a crazy new different way. But it is different than my normal way and it is super delicious. Be sure to check out my Breakfast English Muffin, another delicious breakfast using english muffins.
Breakfast Sausage Strata
Ingredients:
- 1 pound breakfast sausage
- 2- 6 packs english muffins
- 2 cups sharp cheddar cheese
- 8 eggs
- 1 1/2 cup light sour cream
- black pepper, to taste
Directions:
- Preheat oven to 375º F. Spray a 9x13 baking dish with cooking spray.
- In a skillet, over medium heat, cook the sausage until it is completely cooked.
- Cut the english muffins in half, you may not need them all.
- Line the bottom of the prepared baking dish with english muffins, you may need to cut some to make then fit, but keep them in a single layer.
- Top the english muffins with half of the sausage and half of the cheese.
- Place down another layer of english muffins, again in a single layer and cutting to fit, if needed. Top with the remaining sausage.
- In a large bowl whisk together the eggs, sour cream and black pepper. Pour over the top of the casserole, making sure to pour the mixture over all the english muffins.
- Top with the remaining cheese and let the casserole sit for 10 minutes or overnight.
- Cover with foil and bake for 40 minutes or until the eggs are completely cooked.
