Alfredo sauce is well loved by my family, but a traditional Alfredo sauce is not the healthiest. So I was excited to try this recipe because it is lightened up from the traditional Alfredo sauce and it had the twist of lemon in it.
Lemon Fettuccine Alfredo with Chicken and Broccoli
Ingredients:
- 16 ounces fettuccine noodles
- 1 pound boneless skinless chicken breasts
- 4 cups broccoli florets
- 2 tablespoons unsalted butter
- 2 garlic cloves, minced
- 3 tablespoons all purpose flour
- 1 3/4 cups milk
- 3 ounces reduced fat cream cheese, cut into cubes
- 1/2 cup shredded parmesan cheese
- 3 tablespoons heavy cream
- black pepper, to taste
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice
Directions:
- Prepare the pasta according to the package directions, adding the broccoli during the last 5 minutes of cook time. Drain and reserve 1/2 cup pasta water.
- In a large pot, melt the butter over medium heat. Add in the garlic and flour and cook for 1 minute, stirring constantly.
- Slowly pour in the milk, whisking constantly, until the mixture thickens.
- Add in the cream cheese and parmesan cheese, stirring until melted and completely smooth.
- Stir in the heavy cream and season with black pepper. Stir in the lemon zest and lemon juice.
- Add the pasta and broccoli into the sauce and toss to coat everything well.
- Season with additional black pepper if desired.
