Parmesan Chicken Sandwich Melts: Savory Sweet and Satisfying

Sometimes it is hard to please everyone in my family with one meal. But thankfully this one did. My oldest ate two of them for lunch and my youngest ate 1 1/2. They both wanted to make sure I would save some for them to have for lunch the next day. I have to admit my husband and I both ate two of them since they were so good. Next time I just may have to make a double batch so we have plenty of leftovers to enjoy on another day.

Parmesan Chicken Sandwich Melts

Ingredients:

  • 3 cups cooked shredded chicken
  • 1/2 cup plain greek yogurt
  • 1/2 cup miracle whip
  • 1 cup shredded parmesan cheese
  • 8 ounces vegetable cream cheese
  • 9 soft dinner rolls

Directions:

  1. Preheat oven to 350º F.
  2. In a large bowl combine the chicken, yogurt, miracle whip, parmesan cheese until well mixed.
  3. Cut the dinner rolls in half and spread the top and bottom with the cream cheese.
  4. Evenly place the chicken mixture on the bottom half of the buns. Place top half of buns on top of the chicken mixture.
  5. Bake for 10 minutes, or until the chicken mixture is warmed through, cheese is melts and buns are starting to crisp.
