These potatoes are essentially this Cheddar Bacon Dip mixed with potatoes. Delicious potatoes that have earned the nick name "Crack Potatoes" just like the dip earned the nick mane "Crack Dip". You just want to keep eating more and more.
Cheddar Bacon Potatoes
Ingredients:
- 32 ounces light sour cream
- 2 cups reduced fat shredded cheddar cheese
- 2- 3 ounce bag bacon bits
- 2 packages ranch seasoning mix
- 30 ounces frozen shredded hash brown potatoes
Directions:
- Preheat oven to 400º F. Spray a 9x13 baking dish with cooking spray. Set aside.
- In a large bowl combine the sour cream, cheddar cheese, bacon bits and ranch seasoning mix.
- Mix in the frozen hash brown potatoes.
- Spread into prepared baking dish.
- Bake for 45-60 minutes.
Notes:
You can easily cut this recipe in half to make a smaller amount.
I used my Homemade Ranch Seasoning Mix to lower the sodium amount.
