Loaded Tater Tot Casserole: Savory Sweet and Satisfying

I have made several dinner tater tot casseroles over the years like, Chicken Tater Tot Casserole and Crock Pot Tater Tot Casserole. While my husband has liked them none have ever compared to the original Tater Tot Casserole I made many years ago, that tater tot has always been his favorite.

However, that has all changed now, my husband now has a new favorite tater tot casserole, this one! He loved the addition of gravy in the casserole and I have to agree it really made the casserole. Plus, it does not require much work to made the gravy.

Loaded Tater Tot Casserole
Ingredients:
1/2 cup unsalted butter
1/2 cup all purpose flour
32 ounces low sodium chicken stock
1/3 cup heavy cream
black pepper, to taste
32 ounces frozen tater tots
12 ounces turkey bacon, cooked and crumbled
2 cups shredded chicken
1 cup shredded cheddar cheese

Directions:
Preheat oven to 400º F.

Place tater tots in the bottom of a 9x13 baking dish and bake for 20 minutes.

Meanwhile, in a medium saucepan, over medium low heat, melt butter. Whisk in flour and cook until mixture turns a deep brown color, whisking constantly, about 10 minutes. Gradually add in the chicken stock, while continue to whisk constantly. Bring mixture to a low boil and continue to stir constantly until mixture thickens, about 5-10 minutes. Stir in heavy heavy cream and season with black pepper. Remove from heat.

When the tater tots are done pour gravy over top. Top with bacon, chicken and cheese. Return to the oven and bake for 10-15 minutes or until the cheese is melted and casserole is heated through.

Enjoy!!!

Notes:
Half and half may be substituted for the heavy cream.
