This casserole and I have been on quite the journey. The first time I made it I knew it would take longer using brown rice, but it took much longer than anticipated. Even though it was a little soupy it tasted great. So my mission was to fix the soupy issue without it taking forever to cook. I tired another time and it was still soupy. So I went back to the original recipe before my third attempt when I was going to try uncooked rice and saw that it is suppose to be covered and cooked. How could I have missed that both times I made this dish?!
So I tried one last time, with foil, and not surprising, it worked. My next step is to have the recipe since my girls do not like it and it is just me eating it. As much as I like this casserole a whole 9x13 inch baking dish is a bit much for me to eat by myself.
