It has been awhile since I have made some waffles, let alone a special weekend breakfast. Our weekends have been so busy that there has been no time for a special breakfast, only a quick, eat in a few minutes breakfast. It felt so good and tasted so good to enjoy a delicious relaxing breakfast.
Buttermilk Chocolate Chip Waffles
Ingredients:
- 2 cups all purpose flour
- 1 1/2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 cups buttermilk
- 6 tablespoons unsalted butter, melted and cooled
- 2 eggs
- 2/3 cup mini chocolate chips
Directions:
- In a large bowl, whisk together the flour, sugar, baking powder and baking soda.
- In a medium bowl, whisk together the buttermilk, melted and cooled butter and eggs. Add the wet ingredients to the dry ingredients and stir just until combined, the batter will be lumpy. Fold in the chocolate chips.
- Preheat the waffle iron and spray with cooking spray. Pour the batter into the waffle maker and cook according to the manufacturer's directions.

Notes:
I had enough batter for 5 full sized waffles with a little leftover for 1 smaller waffle. My waffle maker takes 3/4-1 cup of batter per waffle.
