I love a good grilled cheese sandwich, especially with sourdough bread. I also love taking the classic grilled cheese sandwich and making it a bit more grown up.
This grilled cheese has a creamy and spicy chipotle sauce on it, shredded chicken and plenty of cheese. The chipotle sauce is so easy to make, I can see myself making a batch of it and using it on all kinds of sandwiches.
Chipotle Chicken Grilled Cheese
Ingredients:
Chipotle Sauce
- 1 chipotle peppers in adobo sauce, canned
- 1 teaspoon chipotle sauce, from can
- 1/2 cup mayonnaise
- 1/3 cup plain Greek yogurt
- 1 tablespoon dried cilantro
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried dill
Sandwich
- 1 teaspoon olive oil
- 1 boneless skinless chicken breast
- black pepper, to taste
- 1/4 cup water
- 10 slices sharp cheddar cheese
- 4 slices bread
- 1 teaspoon unsalted butter
Directions:
Chipotle Sauce
- Add all of the ingredients to a food processor or blender and purée until smooth, about 2-3 minutes. Refrigerate until needed.
Sandwich
- In a small skillet heat the olive oil, over medium-high. Season both sides of the chicken breasts with black pepper and add to the skillet. Cook on each side for 2-3 minutes or just until golden in color on both sides. Add in the water, reduce the heat to low and simmer for 5 minutes or until the chicken is completely cooked. Remove the chicken to a cutting board and allow to cool. Once cooled shred the chicken.
- Even place 2 slices of cheese onto a piece of bread, repeat with another slice of bread. Top the cheese with 1/2 cup shredded chicken per sandwich. Drizzle 2 teaspoons of chipotle sauce on the chicken and then top with 2 slices of cheese per sandwich. Top each sandwich with another slice of bread.
- In skillet, over medium heat, melt the butter. Add in the sandwiches and cook on each side for 2-3 minutes or until the cheese is melted and bread is golden and crispy.

You need 1 cup shredded chicken.
