Breakfast Casserole: Savory Sweet and Satisfying

I wanted to remake this casserole, but did not want to buy potatoes for it and have to figure out what to make with the rest. So I decided to try and use frozen cubed potatoes to see if they would worked and save some time. I also wanted to try and make it the night before and bake it in the morning.


I am happy to report both ideas worked. I used frozen cubed hash browns and assembled the casserole at night. I covered it with aluminum foil and refrigerated overnight. The following morning I pulled the casserole out of the refrigerator and set it on the counter while the oven preheated and then baked it.
