Italian Grinder

Italian Grinder: Savory Sweet and Satisfying

 I used to always order some sort of Italian sandwich when eat at a sub/sandwich shop. I love Italian meats, but would never really make them at home. Partially because a sandwich like this calls for so many different meats and buying them all individual cost a lot. But thankfully one of my favorite stores, Costco, sells a variety pack which includes most of these meats and the price makes it doable. 

This sandwich is loaded with Italian meats, cheese and a delicious grinder salad. The salad is so goo I ate the leftovers on its own with lunch one day. I could eat a whole bowl of the grinder salad it is so good.

Italian Grinder

Ingredients:

  • 4 cibatta rolls
  • 4 slices mozzarella cheese
  • 4 slices provolone cheese
  • 4 slices deli ham
  • 4 slices prosciutto
  • 4 slices hard salami
  • 4 slices soppressata
  • 4 slices sandwich pepperoni
  • 4 slices tomato
  • fresh ground black pepper, to taste
  • 1/4 cup shredded parmesan cheese

Grinder Salad

  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1-2 cloves garlic, grated
  • 1 teaspoon dried oregano
  • 1/4 teaspoon coarse ground black pepper
  • 2 pinches red pepper flakes
  • 1/2 head iceberg lettuce, sliced into 1/2 inch thick
  • 1/2 red onion, thinly sliced
  • 1/3 cup sliced peperoncini, packed

Directions:

  1. Preheat the oven to 400º F.
  2. Separate the rolls and place onto a baking sheet. Place 1 slice of mozzarella cheese on the top half of each roll and 1 slice of provolone on the bottom half of each roll. 
  3. Bake for 4-6 minutes or until the cheese has melted.
  4. Meanwhile, in a large bowl, whisk together the mayonnaise, vinegar, garlic, oregano, black pepper and red pepper flakes.
  5. Add in the sliced lettuce, red onions and peperoncini, toss well to coat.
  6. Once the cheese has melted, top the bottom half with 1 slice of ham and prosciutto. To the top half add 1 slice of salami, soppressata and pepperoni. 
  7. Bake until toasted and meat is heated through, about 6 minutes.
  8. To the bottom half add a slice of tomato and season with black pepper.
  9. Top each bottom half with desired amount of grinder salad and about 1 tablespoon parmesan cheese.
  10. Place top half on and serve.
