I was looking forward to a nice hearty and spicy chili. It was definitely hearty, but not as spicy as I was hoping. It was flavorful and of course delicious, but I was really missing the spiciness I thought the chorizo would bring. Next time I will try using more chorizo and less ground turkey or maybe use all chorizo and no turkey.
Chorizo Chili
Ingredients:
- 1 pound ground turkey
- 8 ounces ground chorizo
- 1 small yellow onion, diced
- 1 clove garlic, minced
- 15 ounce can kidney beans, rinsed and drained
- 6 ounces tomato paste
- 1 cup water
- 14 ounce can fire roasted diced tomatoes
- 1/2 teaspoon ground cumin
- 1/2 tablespoon chili powder
- 1/2 teaspoon dried oregano
Directions:
- In a large pot, over medium heat, cook the ground turkey until completely cooked. Add in the chorizo and cook for 3-4 minutes.
- Add in the onion and garlic and cook for 1-2 minutes or until they have started to soften.
- Add in all of the remaining ingredients and mix well.
- Reduce the heat to a simmer and allow to simmer for 45 minutes, stirring occassionally.
