The coconut flavor was subtle and it was not as creamy as my horchata coffee, but that is because this coffee does not have sweetened condensed milk.

Iced Coconut Horchata Latte
Ingredients:
- 4 cups water
- 1 cup white rice, uncooked
- ground cinnamon, to taste
- 1/3 cup granulated sugar
- 2 cups coconut milk
- 2 teaspoons vanilla extract
- coffee ice cubes
- 4 ounces cold brew coffee
Directions:
- Wash and drain the rice,
- Pour 2 cups of water into a medium saucepan and bring it to a boil. Add in the rice and remove from the heat. Let the mixture sit for at least 2 hours.
- Transfer the rice and water mixture to a blender and add in the ground cinnamon. Blend the mixture well. Pour the mixture through a fine mesh sieve or several layers of cheese cloth. Transfer the mixture to a jar.
- Add in the remaining 2 cups of water, granulated sugar, coconut milk, some more ground cinnamon and vanilla extract. Stir until everything is well mixed. Refrigerate until cold
- Add coffee ice cubes to a glass and pour in the coffee.
- Shake the horchata well and pour 1 cup over the coffee.
