Three ingredients and a little bit of work is all this chicken takes. We eat a lot of chicken and it gets harder and harder to come up with new and different recipes that I think everyone will like. Thankfully everyone enjoyed this chicken, so much that I will be doubling the recipe next time so we have some leftovers.
I used chicken breast and cut them into tender size pieces, but you could skip that step and just use chicken tenderloins. Depending on how many pieces you cut your chicken into, it will determine how much cheese and how many pieces of bacon you will need.
I also went against my better judgement when making these so I am going to share my mistake with you so hopefully you will have better results. The original recipe called for cheddar cheese slices cut in half. I was worried about the cheese melting too much and even half a cheese slice being too big for the chicken that I decided to cut my own cheese. I was still concerned about the cheese melting, but thought it might be okay since it was a thicker slice. Well it melted quite a bit, just like I thought it would. But thankfully, there is an easy fix for that, freeze the cheese. By cutting and then freezing the cheese it will not melt as quickly when baking. Just make sure to take the cheese out of the freezer right before assembling and to work quickly and not handle the cheese as much to prevent it from warming as much as possible.
Bacon Wrapped Baked Chicken Tenders
Ingredients:
- 4 ounces sharp cheddar cheese
- 1 pound boneless skinless chicken breasts
- 8 slices turkey bacon
Directions:
- Cut the cheese into 8 slices and place on a plate. Put the plate into the freezer for a few hours or until frozen.
- Preheat the oven to 450º F. Line a baking sheet with aluminum foil and lightly spray with cooking spray.
- Cut the chicken into 8 pieces.
- Working quickly place a piece of cheese on top of each piece of chicken and wrap a piece of bacon around the chicken and cheese. Place on the prepared baking sheet with the cheese side facing up. Repeat with the remaining chicken, cheese and bacon pieces.
- Bake for 13-18 minutes or until the chicken is completely cooked. Place under the broiler for a few minutes to crisp up the bacon.
