Whenever I make Taco Salad, I top it with Doritos for some crunch. For the dressing I use either a combination of sour cream and salsa or taco sauce or a combination of thousand island dressing and taco sauce. When I can across this version that used Fritos and Catalina dressing, I was intrigued to try it.
Catalina Salad
Ingredients:
- 1 pound ground turkey
- 1 package taco seasoning
- 2/3 cup water
- 1 head romaine lettuce, chopped
- 1 large tomato, diced
- 15.5 ounce can hot chili beans, drained
- 12 ounces sharp cheddar cheese, shredded
- 9 1/4 ounce bag Fritos
- 1 cup Catalina Dressing
Directions:
- In a large skillet, over medium-high heat, cook and crumble the ground turkey until completely cooked. Drain any liquid in the skillet.
- Add the taco seasoning to the skillet followed by the water. Bring to a boil and then simmer for 5 minutes, stirring occasionally.
- Meanwhile, Add the lettuce to a large bowl and top with the diced tomato, chili beans and shredded cheese.
- Add the meat and stir to mix it all together.
- Top each serving with some Fritos and Catalina dessing.
Notes:
I used my homemade taco seasoning in this recipe.
