My family used to love tater tots with our egg, bacon and sausage breakfast. I said used to, because a few years ago, my husband found hash brown patties and that is now our favorite. Although, the last year or so I have been having trouble finding them in my normal grocery store. Thankfully I was able to find some to make this delicious casserole filled with our favorite breakfast foods.
Hash Brown Breakfast Casserole
Ingredients:
- 9 ounces low sodium turkey bacon, cooked
- 12 ounces breakfast sausage links, cooked
- 8 frozen hash brown patties
- 12 eggs
- 12 ounces sharp cheddar cheese, shredded
- 1/2 cup milk
Directions:
- Preheat the oven to 350º F. Spray a 9x13 inch baking dish with cooking spray.
- Cut the sausage into pieces and crumble the bacon.
- In a large bowl, whisk the eggs. Add in 2/3 of the sausage and bacon. Set aside the rest.
- Add in 2 cups of shredded cheese, stir to mix.
- Place the frozen hash brown patties into the bottom of the baking dish.
- Pour the egg mixture over top of the hash browns.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 30 minutes. During the last 10 minutes of baking time remove the baking dish and sprinkle with the remaining cheese, sausage and bacon. Return the baking dish to the oven and bake for 10 minutes or until the eggs are cooked through.
