Breakfast Enchiladas with Sausage Gravy: Savory Sweet and Satisfying
 
My go to at any Mexican restaurant is nachos. I'm sure the other food is good, but I just have to have my nachos. Now theses breakfast enchiladas, are another story. I do have a Breakfast Nachos recipe, but these enchiladas are just as good.

Tortillas filled with sausage, tater tots, scrambled eggs and cheese and then topped with a homemade sausage gravy and more cheese. These enchiladas are filling and a delicious way to start the day.

In order to enjoy these enchiladas, it does take some work, but it is totally worth it. You will have to cook the sausage and make the sausage gravy, scramble the eggs, cook the tater tots, assemble the enchiladas and bake. You can prepare everything and even assemble the enchiladas the night before and just cook in the morning. You will have to cook them for a little bit longer, maybe 5-10 minutes, since everything will be cold. I have yet to try this, so I can not give you an accurate time.

Breakfast Enchiladas with Sausage Gravy

Ingredients:

  • 1 pound breakfast sausage roll
  • 1/2 cup diced yellow onion
  • 1 jalapeño, diced
  • 1/3 cup all purpose flour
  • 2 3/4 cup milk
  • 1/2 teaspoon black pepper, divided
  • 10 eggs
  • 2 tablespoons unsalted butter
  • 2 cups frozen tater tots, cooked
  • 4 ounces pepper jack cheese, shredded
  • 4 ounces cheddar cheese, shredded
  • 10 tortillas, fajita sized

Directions:

  1. In a large nonstick skillet, over medium-high heat, cook and crumble the sausage. When sausage is cooked about halfway, add in the diced onions and jalapeños.
  2. With a slotted spoon, remove 1 cup of the sausage mixture to a large bowl and set aside.
  3. Place the skillet back over medium-high heat. Sprinkle the flour over the sausage and stir for 1 minute.
  4. Slowly pour in the milk while stirring constantly. Continue to stir constantly until the mixture has thickened. Stir in 1/4 teaspoon black pepper. Remove from the heat and set aside, stirring occasionally to prevent a crust from forming on the gravy.
  5. Preheat the oven to 350º F. Spray a 9x13 inch baking dish with cooking spray.
  6. In a large bowl, whisk the eggs. Season with 1/4 teaspoon black pepper.
  7. In a large nonstick pan, melt the butter over medium heat. Pour in the eggs and stir occasionally to cook and scramble the eggs. Remove the skillet from the heat when the eggs are slightly undercooked. They will finish cooking in the oven.
  8. To the bowl with the reserved sausage, add in the scrambled eggs, tater tots, half of the pepper jack and cheddar cheese.
  9. Place about 1/2 cup of the filling down the center of each tortilla. Roll up the tortillas and place seam side down in the prepared baking dish.
  10. Pour the sausage gravy over top of the tortillas and sprinkle with both of the remaining cheeses. Bake for 30-40 minutes.
