Okay, so I may have gone a little bit overboard with the pictures. I just could not decide which two to use so I used all four.

If you have followed this bog for some time now, you probably now that I have tried way too many snickerdoodle cookie recipes and they always turn out flat as a pancake. They have a good taste, but do not have that soft pillowy look. However, when I make other recipes inspired by the snickerdoodle cookie, like this Snickerdoodle Latte, or these Baked Snickerdoodle Doughnuts, or Snickerdoodle Overnight Oatmeal, or even Snickerdoodle Hot Chocolate, they turn out great.

These muffins are no exception. They have a little crunchy cinnamon top to them and the insides are soft and tender just like a snickerdoodle cookie.

Snickerdoodle Muffins

Ingredients:

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 2 heaping teaspoons cinnamon
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup low fat milk

Topping

  • 1/4 cup granulated sugar
  • 1 tablespoon cinnamon

Directions:

  1. Preheat the oven to 375º F. Grease a muffin tin with cooking spray.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder and cinnamon.
  3.  In a large bowl, with an electric mixer, or in the bowl of a stand mixer, beat together the butter and sugar until light and fluffy, about 4-5 minutes. Beat in the eggs, one at a time. Beat in the vanilla extract.
  4. Add half of the flour mixture to the butter mixture and beat until combined. Add in the sour cream and milk, beating until combined. Add in the remaining flour and beat until combined. The batter will be on the thick side.
  5. In a small bowl, whisk together the sugar and cinnamon. 
  6. Spoon the batter into the prepared muffin tin, filling the cups 3/4 full and sprinkle with about 1 teaspoon of cinnamon sugar mixture.
  7. Bake for 20-25 minutes, or until and inserted toothpick comes out clean.
