I am a sucker for a good cheese dip, especially if it has a little spiciness to it. Well, let me clarify, a good homemade cheese dip. My husband has bought quite a few store bought cheese dips when the craving hits, but none of them ever taste that good, definitely not as good as homemade. Like this very cheesy and very delicious dip.
Chili Relleno Dip
Ingredients:
- 8 ounces cream cheese, room temperature
- 6 ounces Monterey Jack Cheese, shredded
- 4 ounces sharp cheddar cheese, shredded
- 7 ounce can diced green chiles
- 1/2 cup salsa
Directions:
- Preheat the oven to 350º F.
- In a large bowl, with an electric mixer, beat the cream cheese until smooth. Add in 1 cup (4 ounces) of the Monterey Jack cheese, 1/2 cup (2 ounces) cheddar cheese and garlic powder. Beat on medium speed until well combined.
- Reserve 2 teaspoons of the diced green chilies and stir the rest of the can into the cheese mixture.
- Spread the mixture into an 8 inch baking dish. Top with the salsa, remaining cheeses and the reserved diced green chiles.
- Bake for 20-25 minutes or until the dip is hot and cheese is melted.
