This casserole is easy to prepare. You don't even have to wait for the cream cheese to come to room temperature, although I do get it out and let it sit on the counter while I cook the sasusage. The hardest part is waiting for the casserole to bake.
This casserole has most of my favorite breakfast foods in one creamy and cheesy dish. Even though this dish is not hard to prepare and does not take much time, you can prepare it the night before, refrigerate and bake in the morning.
Sausage Cream Cheese Tater Tot Breakfast Casserole
Ingredients:
- 2 pounds hot breakfast sausage roll
- 8 ounces cream cheese, cut into pieces
- 32 ounce bag frozen tater tots
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 8 ounces sharp cheddar cheese, shredded
- 8 eggs
- 2 cups milk
Directions:
- Preheat the oven to 350º F. Lightly spray a 9x13 inch baking dish with cooking spray.
- In a large skillet, over medium-high heat, cook the sausage until crumbled and completely cooked, drain any fat. Add in the cream cheese and stir until completely melted.
- In a large bowl, gently stir together the frozen tater tots, sausage and cream cheese mixture and shredded cheddar cheese. Transfer to the prepared baking dish and lightly spread into an even layer.
- In another large bowl, whisk together the eggs, pepper, garlic and onion powder and milk. Pour over the tater tot mixture.
- Bake, uncovered, for 60-70 minutes or until the eggs are set.

Notes:
To bake the following morning, cover the baking dish with aluminum foil and refrigerate. In the morning remove the casserole from the refrigerator and set on counter while the oven preheats. Remove the foil and bake. It may take longer to bake, after being in the refrigerator overnight.
