Bite sized pieces of chicken are coated in panko for a crunchy bite. Baked instead of fried to be healthier and then coated in a delicious chili lime sauce.
Chili Lime Popcorn Chicken
Ingredients:
- 1 1/2 pounds boneless skinless chicken breasts
- 2 egg whites
- 2 tablespoons water
- 1 1/3 cups panko
- 1/2 cup unsalted butter, melted
- 2 tablespoons chili lime seasoning
Directions:
- Preheat the oven to 425º F. Spray a baking sheet with cooking spray.
- Cut the chicken breasts into about 1/2 inch pieces.
- In a shallow bowl, beat the egg whites and water together.
- Place the panko into a shallow bowl.
- Working in small batches, place the chicken pieces into the egg whites and coat. Then place the chicken into the panko, pressing down lightly to help the panko stick. Place the chicken pieces onto the prepared baking sheet and continue this process until all of the chicken has been coated.
- Bake for about 6 minutes or until the chicken is browned. Turn the chicken pieces over and bake an additional 6 minutes or until browned on the other side.
- Meanwhile, in a large bowl stir together the melted butter and chili lime seasoning. Add in the chicken pieces and toss to coat. Place the chicken pieces back onto the baking sheet and bake an additional 5 minutes.
