Holy moly! I can't believe how incredibly busy and crazy these past two weeks have been! Between my work schedule and race schedule and the girls marching band schedule, I have not had a moment to sit down and work on the blog, let alone meal plan and go grocery shopping or even do laundry. Sunday was spent meal planning, making a grocery list and doing two weeks worth of laundry. I finally had some time in the late afternoon to start working on my blog, before I had to start working on this easy and delicious dinner.
The chicken breasts I had were really big, so I doubled all of the other ingredients and divided it between two 9x13 inch baking dishes and put two chicken breasts in each pan. This way I have enough rice for 8 servings and the chicken served 8. This means I do not have to cook dinner tonight when I get home from work and the grocery stores.
