These pancakes are a must for any coffee lover! Chocolate chip pancakes with a coffee flavor, then topped with a coffee glaze. Even if you are not a coffee lover, but enjoy an occasional coffee drinker you will like these pancakes. My girls who only drink the occasional sugar filled frozen coffee loved these pancakes. I think I need to double the recipe next time so there are leftovers for another day.
Espresso Chip Pancakes
Ingredients:
- 2 tablespoons unsalted butter, divided
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 2 tablespoons powdered sugar
- 2 tablespoons espresso powder
- 2 cups buttermilk
- 2 eggs
- 1/2 cup mini chocolate chips
Espresso Glaze
- 2 cups powdered sugar
- 2 tablespoons buttermilk
- 1 tablespoon espresso powder
Directions:
- Heat a griddle over medium-low heat.
- In a medium bowl, whisk together the flour, baking powder, sugar, espresso powder.
- In a medium microwave safe bowl, melt 1 tablespoon of butter. whisk in the buttermilk and then whisk in the eggs. Pour this mixture into the dry ingredients and stir just until combined, the batter will have some lumps.
- Add the remaining 1 tablespoon of butter onto the griddle and allow it to melt.
- Pour 1/4 cup of batter onto the hot griddle and quickly sprinkle with some mini chocolate chips. Allow the pancake to cook until bubbles from on the edges and the bottom is golden brown. Flip the pancake over and cook on the other side until bottom is golden brown. Repeat with the remaining batter.
- Meanwhile, in a small bowl whisk together the espresso glaze ingredients. Add more buttermilk if needed to reach desired consistency.
- Serve the pancakes with the espresso glaze drizzled over top.
