A chicken sandwich with such big flavor. Teriyaki sauce on its own has a big flavor, but when you add sweet pineapple and spicy cheese the flavor gets even better.
When I made this I did not toast my hamburger buns, but think I will give it a try next time. I also might use some of the leftover teriyaki sauce from the pineapple to spread on the top half of the bun, although the sandwich already has a great teriyaki flavor.
Teriyaki Chicken Sandwich
Ingredients:
- 12 ounces teriyaki sauce
- 3/4 cup brown sugar
- 4 boneless skinless chicken breasts
- 4 sliced pineapple rings
- 4 slices pepper jack cheese
- 4 hamburger buns
Directions:
- In a medium bowl, stir together the teriyaki sauce and brown sugar. Stir until the brown sugar has dissolved.
- Pound the chicken breast into an even thickness.
- Place the chicken into a resealable bag and pour in 1/2 of the teriyaki mixture. Press the air out of the bag and seal. Refrigerate for 4-5 hours.
- Divide the remaining sauce into two separate bowls.
- In a skillet, over medium-high heat, add the chicken and pineapple. Using one bowl of teriyaki sauce for the chicken and the other for the pineapple, baste the chicken and pineapple every few minutes. Turn the chicken and pineapple over and cook on other side basting every few minutes, until the chicken is completely cooked and pineapple is cooked to your liking. A minute or two before the chicken is done add a piece of cheese to each breasts so it can melt.
- Place a piece of chicken on the bottom half of each bun and top with a pineapple slice and place top half of bun on.

Notes:
Depending on how big your chicken breasts are, you may be able to make two sandwiches out of one by cutting it in half. If you are going to do this, cut the chicken before placing it in the marinade.
You can grill the chicken and pineapple, but my husbands prefers to use an electric skillet.
