Creamy casseroles are such a staple in the midwest. They are typically easy to prepare and have such a comforting taste to them. The only downside with a casserole like this is the colors are all very similar making it look bland, but the taste is anything but bland and one that family came back for more of.
This casserole is better than most because it can be made ahead and refrigerated until ready to bake. I would bake it within 24 hours of making the casserole, I made it one night and then baked it the following night. If you choose to prepare it ahead, do not add the croutons until ready to bake or they will get soggy in the refrigerator. Depending on how far ahead you prepare the casserole you will not need to thaw the hash browns. I added them frozen to the casserole and by the next night they were thawed, same with the corn.
Cheesy Chicken Hash Brown Casserole
Ingredients:
- 1-10 3/4 ounce can cream of chicken soup
- 1 cup sour cream
- 8 ounces cream cheese, room temperature
- 1/2 cup milk
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 ounce ranch seasoning mix
- 16 ounces frozen corn, thawed
- 8 ounces sharp cheddar cheese, shredded
- 3 cups cooked shredded or cubed chicken breasts
- 32 ounces cubed hash browns, thawed
- 1-1 1/2 cups crushed seasoned croutons
Directions:
- Preheat the oven to 350º F.
- In a large bowl, stir together the soup, sour cream, milk, cream cheese, thyme, pepper and ranch seasoning. Stir until well combined and smooth.
- Stir in the corn and half of the cheese, about 1 cup.
- Stir in the chicken and the potatoes. Spread the mixture into an ungreased 9x13 inch baking dish.
- Sprinkle the remaining cheese on top, followed by the crushed croutons.
- Bake for 30 minutes or until hot and bubbly.
