Banana muffins get even more delicious with some dark chocolate added and a swirl of Nutella on top. I love the way the swirl of Nutella looks on top of the muffins, makes it hard to wait for them to cool so I can enjoy one.
Chocolate Nutella Banana Muffins
Ingredients:
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1/3 cup canola oil
- 1 1/3 cups mashed ripe banana, about 3 medium
- 1 1/2 cups all purpose flour
- 1/4 cup dark cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup Nutella
Directions:
- Preheat the oven to 350º F. Spray 15 muffins cups between two muffins tins or line with cupcake liners.
- In a large bowl, beat together both sugars, the egg and oil. Beat in the mashed banana, until well mixed.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder and baking soda.
- While mixing, slowly add the flour mixture to the banana mixture. Continue to mix just until combined, do not over mix.
- Divide the batter evenly between the muffin cups, filling no more than 3/4 full.
- Place the Nutella in a small microwave safe bowl and microwave for 15-30 seconds or until slightly melted.
- Evenly divide the Nutella and place on top of the batter. Use a toothpick and gently swirl the Nutella into the batter.
- Bake for 18 minutes or until an inserted toothpick (do not stick into the Nutella) comes out with just a few moist crumbs.
- Allow the muffins to cool in the muffin tins for 2 minutes and then transfer to a cooling rack and allow them to cool completely.
