I love chicken recipes like this and I love them for a very specific reason. Typically, when I make a recipe that is just chicken breasts, I prepare the chicken and my husband cooks it. It is always nice to have one less thing to do when preparing dinner and then I can focus more on the sides.
This chicken is super easy to prepare and you can tailor the amount of spiciness it has. The majority of the spiciness comes from the cayenne pepper, but some will also come from the chili powder. Adjusting the amount of these two spices will let you add more or less heat to the chicken.
Spicy Honey Glazed Chicken
Ingredients:
Rub
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/8-1/4 teaspoon ground cayenne powder
Chicken
- 4 boneless skinless chicken breasts
- 1 teaspoons olive oil
Glaze
- 1/4 cup honey
- 1 tablespoon apple cider vinegar
Directions:
- Preheat an electric skillet to 350º F.
- In a small bowl, whisk together all of spices for the rub.
- Place the chicken on a large plate or cutting board and drizzle with olive oil, making sure all pieces and both sides of the chicken is coated with oil.
- Sprinkle half of the rub on top of the chicken and rub it all over the chicken. Flip the chicken over and sprinkle with the remaining rub and rub it all over the chicken. Making sure both sides of the chicken are completely covered in the rub.
- Place the chicken breasts into the preheated skillet and place the lid on the skillet. Cook covered for about 10-12 minutes. Remove the lid and flip the chicken over. Cover the skillet again and cook until the chicken is completely cooked, about another 10-12 minutes.
- While the chicken cooks, in a small bowl whisk together the honey and apple cider vinegar. If needed, microwave for 10-15 seconds to make it easier to mix. Transfer 1/2 of the glaze to another small bowl.
- During the last minute of cooking time, brush half of the glaze onto both sides of the chicken. Remove the chicken from the skillet, place on a clean plate and drizzle with the remaining glaze. Serve immediately.

Notes:
You can cook this chicken in a skillet on the stove following the directions from above. You can also cook the chicken on a grill.
