When you are cleaning out/organizing your pantry and you find a can of coconut milk and it is hot chocolate season you make coconut hot chocolate or at least that is what I did.
When it comes to hot chocolate toppings I am team whipped cream. It's not that I do not like marshmallows, but I just like the way whipped cream melts and tastes in hot chocolate. However, when you combine marshmallows and whipped cream together, you get the most delicious hot chocolate topping.
Coconut Hot Chocolate
Ingredients:
- 1 1/2 cups canned coconut milk, room temperature
- 2 tablespoons brown sugar
- 1 tablespoon unsweetened cocoa powder
- 1/4 cup semi-sweet chocolate chips
- 1 teaspoon coconut extract
Marshmallow Whipped Cream
- 1/4 cup heavy whipping cream, cold
- 1/4 cup marshmallow fluff
- 1/2 teaspoon vanilla extract
Directions:
Coconut Hot Chocolate
- Before opening the coconut milk, shake the can very well. After opening the can, if the solid and liquid are still separated, pour into a bowl and whisk until fully combined. Then measure out 1 1/2 cups.
- In a medium saucepan, whisk together the brown sugar and cocoa powder. Slowly pour in the coconut milk while whisking.
- Bring the mixture to a gentle boil, over medium-low heat, stirring constantly.
- Once the mixture comes to a gentle boil, remove from the heat and add in the chocolate chips. Stir until the chocolate has completely melted and then stir in the coconut extract.
- Pour the hot chocolate into 2 mugs.
Marshmallow Whipped Cream
- In a medium bowl, add in the cold whipping cream, marshmallow fluff and vanilla extract. Using an electric mixer beat until stiff peaks form. Pipe or scoop onto of the hot chocolate.

Notes:
After the chocolate has melted, if the hot chocolate is too thick, whisk in a bit more milk, if it is too thin, bring the mixture to a boil again and cook, stirring constantly until it has thickened to your liking.
