Cheesy Sausage and Hash Brown Breakfast Casserole: Savory Sweet and Satisfying

I have been running out of breakfast meals to make and my breakfast Pinterest board is looking kind of empty.  Pinterest must have known that because this recipe popped up at the right time.


Not only does this casserole have some breakfast favorites, like eggs, hash browns and sausage, there are some veggies added in. It is fairly easy to prepare and makes a delicious and hearty breakfast.

Cheesy Sausage and Hash Brown Breakfast Casserole

Ingredients:

  • 16 ounces roll hot breakfast sausage
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 10 eggs
  • 1/2 cup milk
  • 32 ounces diced frozen hash browns, thawed
  • 8 ounces sharp cheddar cheese, shredded
  • 1/4 teaspoon ground black pepper

Directions:

  1. Preheat the oven to 375º F. Spray a 9x13 inch baking dish with cooking spray.
  2. In a large skillet, over medium-high heat, add in the sausage and cook, crumbling the sausage as it cooks. About 5 minutes before the sausage is done add in the onion, garlic and red pepper. Cook until the sausage is browned and veggies are softened, about 5 minutes. Drain any grease that remains and transfer to a large bowl.
  3. To the large bowl add in the thawed hash browns and 1 1/2 cups cheddar cheese. Stir until well combined.
  4. In a separate bowl, whisk together the eggs, milk and black pepper until well combined. Pour this mixture over the hash brown mixture and stir to combine.
  5. Pour the hash brown mixture into the prepared baking dish and sprinkle the remaining 1/2 cup of cheddar cheese over top. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-20 minutes or until the eggs are set and the potatoes are tender. Allow the casserole to rest for 5 minutes before serving.

Notes:
If your hash browns are not completely thawed the casserole will take longer to bake.
