I do not have a high success rate with chicken chili. I have made it twice, the first time it was absolutely disgusting and gross. Ended up throwing it out because nobody like it. The second time, was a huge success and everyone loved it and it is part of this page, Crock Pot Jalapeño Popper Chicken Chili.
When I came across the recipe for this chili, I was skeptical given my history with chicken chili. However, this flavor profile I have used in other other recipe and it was a big success. So, I figured I'd give it a try and see if I can up my success rate on the chicken chili front.
I can now say that I have made more keeper chicken chili recipes than bad ones, yeah! This chili is creamy and loaded with flavor, plus it is an easy dump everything in the crock pot and let the crock pot do all the work.
Crock Pot Cream Cheese Chicken Chili
Ingredients:
- 2 boneless skinless chicken breasts
- 16 ounces frozen corn
- 15 ounce can low sodium black beans, drained and rinsed
- 15 ounce can diced tomatoes with chilies
- 2 cups low sodium chicken broth
- 1 ounce packet ranch seasoning mix
- 1/2 teaspoon cumin
- 1 tablespoon chili powder
- 1 teaspoon onion powder
- 8 ounce package cream cheese
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon
Directions:
- Place the chicken into the bottom of a crock pot.
- Add in the corn, beans, tomatoes, chicken broth, ranch seasoning, cumin, chili powder, onion powder. Stir to mix.
- Cut the cream cheese into chunks and place into the crock pot.
- Cover the crock pot and cook on low for 6-8 hours.
- Remove the chicken and shred with two forks. Return the chicken to the crock pot.
- Add in the cheese and bacon and stir until the cheese is melted.

Notes:
I used frozen chicken breasts and they were cooked within 6 hours, my crock pot cooks hot/fast.
