I have really grown to love oatmeal. I also love experimenting with new flavors of oatmeal.
Cranberry Maple Almond Baked Oatmeal
Ingredients:
- 2 cups old fashioned rolled oats
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 cup sliced almonds, toasted
- 1 3/4 cups milk
- 5 tablespoons maple syrup
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon orange zest
- 1 1/2 cups cranberries, fresh or frozen
Cinnamon Maple Glaze:
- 1/2 cup powdered sugar
- 1/4 teaspoon ground cinnamon
- 2 teaspoons maple syrup
- 2-3 teaspoons milk
Directions:
- Preheat the oven to 350º F. Spray a 9x9 inch baking dish with cooking spray.
- In a large bowl, stir together the oats, cinnamon, baking powder and almonds.
- In a medium bowl, whisk together the milk, maple syrup, egg, orange zest and vanilla extract.
- Pour the wet ingredients into the dry and stir until well combined. Stir in the cranberries.
- Pour the mixture into the prepared baking dish and bake for 35-40 minutes or until the top is golden brown and the oatmeal is set.
- Let the oatmeal rest for 5-10 minutes before serving.
- Meanwhile, in a small bowl, whisk together all of the glaze ingredients, starting with 2 teaspoons of milk and adding more to reach desired consistency.
- Drizzled desired amount of glaze over the oatmeal and cut into 4 squares. Serve with any extra glaze, if desired.
