Cranberry Maple Almond Baked Oatmeal: Savory Sweet and Satisfying

I have really grown to love oatmeal. I also love experimenting with new flavors of oatmeal.

This latest baked oatmeal takes my love of cranberries and adds them to an easy baked oatmeal to create a sweet and slightly tart oatmeal. The cinnamon maple glaze on top may not be the healthiest addition to the oatmeal, but it sure is delicious and makes the oatmeal taste even better.

Cranberry Maple Almond Baked Oatmeal

Ingredients:

  • 2 cups old fashioned rolled oats
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 cup sliced almonds, toasted
  • 1 3/4 cups milk
  • 5 tablespoons maple syrup
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon orange zest
  • 1 1/2 cups cranberries, fresh or frozen

Cinnamon Maple Glaze:

  • 1/2 cup powdered sugar
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons maple syrup
  • 2-3 teaspoons milk

Directions:

  1. Preheat the oven to 350º F. Spray a 9x9 inch baking dish with cooking spray.
  2. In a large bowl, stir together the oats, cinnamon, baking powder and almonds.
  3. In a medium bowl, whisk together the milk, maple syrup, egg, orange zest and vanilla extract.
  4. Pour the wet ingredients into the dry and stir until well combined. Stir in the cranberries.
  5. Pour the mixture into the prepared baking dish and bake for 35-40 minutes or until the top is golden brown and the oatmeal is set.
  6. Let the oatmeal rest for 5-10 minutes before serving.
  7. Meanwhile, in a small bowl, whisk together all of the glaze ingredients, starting with 2 teaspoons of milk and adding more to reach desired consistency.
  8. Drizzled desired amount of glaze over the oatmeal and cut into 4 squares. Serve with any extra glaze, if desired.
