Dill Pickle Cheese Bread: Savory Sweet and Satisfying

Calling all pickle lovers! This bread is for you! My mom who is most definitely not a pickle lover sent this recipe. She knew me being a pickle lover would probably like this bread. Well, she was partly right, I didn't just like it, I loved it and so did my husband. My kids on the other hand said it would taste better without the pickles. Um, then it would just be cheese bread. "I know, that's the point." said my oldest.

Dill Pickle Cheese Bread: Savory Sweet and Satisfying

This easy bread may be dense, but it is full of pickle flavor and anything but dry.

Dill Pickle Cheese Bread

Ingredients:

  • 1/2 cup sour cream
  • 1/2 cup canola oil
  • 2 eggs
  • 1 tablespoon granulated sugar
  • 1 3/4 cups all purpose flour
  • 1 1/4 teaspoons baking powder
  • 2 tablespoons pickle juice
  • 1 cup diced dill pickles
  • 1 cup shredded sharp cheddar cheese
  • 1 1/2 tablespoons dried dill

Directions:

  1. ​Preheat the oven to 350º F. Line a 9x5 inch loaf pan with parchment paper, allowing the paper to extend over the sides of the pan.
  2. In a large bowl whisk together the sour cream, eggs, vegetable oil and sugar, whisking until well combined.
  3. Add in the flour, baking powder and pickle juice. Stir just until combined.
  4. Gently fold in the diced pickles, 1/2 cup cheddar cheese and dill. Pour the batter into the prepared loaf pan and smooth the top.
  5. Bake for 30-40 minutes or until an inserted toothpick comes out clean and the top is golden brown.
  6. Remove the loaf pan from the oven and turn on the broiler to high.
  7. Sprinkle the remaining 1/2 cup cheddar cheese over top of the bread. Place the loaf pan under the broiler for about 3-5 minutes or until the cheese is melted and golden.
  8. Allow the bread to cool in the pan, then using the over hang of parchment paper, lift the bread from the pan and slice.

Notes:
You can substitute the dried dill with fresh, just use 4 tablespoons.

The original recipe uses 3/4 teaspoon kosher salt.
