Pancakes are made super easy by baking them in a mini muffin tin. No need to stand over a hot griddle flipping pancakes in the morning.
I used chocolate chips in these pancake muffins, who doesn't like chocolate in their pancakes, but you could always use fruit instead.
Chocolate Chip Pancake Muffins
Ingredients:
- 1 3/4 cups all purpose flour
- 1/2 cup quick cook oats
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 eggs, lightly beaten
- 1 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1 cup mini chocolate chips
Directions:
- Preheat the oven to 350º F. Spray 2- 24 count mini muffin tins with cooking spray.
- In a large bowl, whisk together the flour, oats, sugar, baking powder and baking soda.
- Whisk in the eggs and buttermilk, then whisk in the melted butter.
- Gently stir in 3/4 cup of mini chocolate chips.
- Spoon about 1 heaping tablespoon of batter into each muffin cup (about 2/3 full) and top with remaining mini chocolate chips.
- Bake for 10-12 minutes or until an inserted tooth pick comes out clean.
- Run a knife around the edges of the pancake muffins and remove from the muffin tin. Serve immediately.

Notes:
If you only have 1 mini muffin tin, bake one batch, then remove the muffins and fill the muffin tin again and bake the second batch of muffins.
