I am beginning to think I could eat fried rice at least once a week. Especially with the many varieties I have been making.
This latest variety takes fried rice and adds crispy bacon, delicious crispy bacon. I used turkey bacon because that is what my family prefers, well most of my family. My oldest daughter likes "real bacon" as she calls it, but neither me or my husband like to cook that type of bacon and deal with all of the bacon grease. As with any recipe you can use any type of bacon you prefer.
Bacon Fried Rice
Ingredients:
- 8 ounces bacon, chopped
- 1 small yellow onion, diced
- 1 cup frozen peas and carrots
- 3 eggs, lightly beaten
- 3 cups cooked brown rice
- 2 teaspoons sesame oil
- 3 tablespoons low sodium soy sauce
- chopped green onions, optional
Directions:
- In a large skillet, over medium-high heat, add the bacon and cook until crispy. Remove the bacon with a slotted spoon and transfer to a paper towel lined plate. Drain the bacon grease from the skillet, except for about 1 tablespoon. If you do not have 1 tablespoon of bacon grease add in some olive oil.
- To the skillet, add in the chopped onion and peas and carrots. Sauté for about 1-2 minutes or until the vegetables are tender.
- Slide the vegetables to one side of the skillet and add the beaten eggs to the other side of the skillet. Cook and scramble the eggs until completely cooked. Gently stir the eggs and vegetables together.
- Add the bacon back to the skillet along with the rice and stir to combine everything together. Stir in the sesame oil and soy sauce, allow to heat through.
- Sprinkle green onions on top, if desired, and serve.

Notes:
When making fried rice, day old cooked rice works better than freshly made rice and you can use brown or white rice.
