Honey and mustard are such a delicious and I think classic combination. Adding bacon and cheese to that combination just adds even more deliciousness.
Normally I eat only half a chicken breast since they are so large, but this time I ended up going back for more, because this chicken is so very good!
Cheesy Honey Mustard Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- black pepper, to taste
- 3/4 cup honey
- 1/2 cup dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon paprika
- 1/4 cup cooked and crumbled bacon
- 1 cup shredded mozzarella cheese
Directions:
- Preheat the oven to 375º F.
- Season both sides of the chicken with black pepper and place into a 9x13 inch baking dish.
- In a small bowl whisk together the honey, mustard, lemon juice and paprika. Pour this mixture over the chicken breasts.
- Bake for 20-25 minutes or until the chicken is almost cooked through.
- Top each chicken breast with equal portions of bacon and cheese, about 1 tablespoon of bacon and 1/4 cup cheese.
- Bake for an additional 10 minutes or until the the cheese is starting to brown and chicken is completely cooked.
