It's been awhile since I made some mashed potatoes and with some potatoes leftover from another recipe that I needed to use sooner than later, this recipe seemed like a good fit. I already had everything I needed and the perfect amounts.
My kids were not hug fans of the broccoli in the mashed potatoes, but I loved it. Mashed potatoes are creamy, cheesy and has the added benefit of a vegetable, so delicious.
Broccoli Cheddar Mashed Potatoes
Ingredients:
- 2 pounds russet potatoes, chopped
- 2 cups finely chopped broccoli
- 1/4 cup unsalted butter, cubed
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- black pepper, to taste
Directions:
- Add the diced potatoes to a large pot and cover with cold water. Place the pot over high heat and bring to a boil.
- Once the water comes to a boil, reduce the heat to medium-low and cook until the potatoes are fork tender, about 15-25 minutes.
- Drain the potatoes and return to the pot.
- Add in the broccoli, butter and sour cream. Using an electric mixer, mix until the potatoes are mashed, to your liking and everything is combined.
- Add in the cheese and black pepper stirring to mix.

Notes:
I left the skins on my potatoes, but if you do not like skins in your mashed potatoes, peel the potatoes before you chopped them.
When boiling potatoes, the smaller they are diced the faster they will cook, larger pieces of potatoes will take longer to cook.
I used frozen broccoli that I thawed and then finely chopped. You could also use a head of fresh broccoli and cut off the florets and then finely chop.
